Traditional recipe
South Tyrolian beer soup
1lt (1¾ pints) Beer , 235ml (8floz) Dry White Wine, 3-4 Egg, Yolks , 1 Lemon, zest only , 4 tbsp Butter, 2 tbsp Flour , 1 tbsp Sugar Pinch, Cinnamon Pinch, Ginger Pinch, Nutmeg Pinch, Salt Allow the beer to go flat. Melt the butter in a saucepan, slowly add the flour a little at a time, whilst stirring constantly, cook until golden. Slowly pour in the beer, while continuing to stir, to avoid lumps. Add the spices and salt, simmer gently for about 20 minutes. Beat the egg yolks, add the sugar and white wine. Remove about 115ml (4floz) of the soup and slowly stir into the mixture. Allow the soup to cool slightly and slowly stir into the soup, heat but do not allow to boil. Taste and adjust seasoning, Serve with crusty bread or toast.
